Garry's Chilli

I am continually amazed at the raves this gets as the recipe is easy and uncomplicated to make. Lazy man cooking. I'm posting it to lift the veil of mystery.


1 Medium yellow onion
3 pounds ground beef
2 12 oz cans Brooks chilli hot beans
2 cans petite diced tomatoes
2 oz tequila

Yield: 5 pounds of chilli.

Dice the onion and saute lightly with olive oil, and a pinch of salt
until golden.

Brown the ground beef with a generous tablespoon of salt, add the
sauteed onions about two third of the way through browning. Break the
meat up thoroughly while cooking. Drain off grease.

Open all cans into a 4 quart pot stir, add the meat and stir to combine
all ingredients.

Simmer for one to three hours to combine Stir every 15 minutes or so to
prevent burning. It can also be mixed in a crock pot for all day no
fuss cooking. Still needs to be stirred about once an eon.

Refrigerate overnight. Yes I consider this part of the cooking process.

The result is a mild chilli that can be hot sauced to the diner's palate.

I've also done this in a dutch oven on the stove. It could be baked if you wished. My dutch over produces hot spots on the stove so you have to watch it.

Best for all day is the crock pot.
