This morning I made the kid and myself some comfort food. I learned this dish when I was in the Army and poor.
Ingredients:
1 pound of ground beef, or more depending on the number of people to cook for. 1 pound for every one to two people.
2 - 4 eggs, depending on how many people you are going to feed or if you want leftovers.
1 - 2 cups of cooked rice, same reason as above
1 cup of mushrooms, chopped or not - optional
1/2 of chopped green onions - optional
Oil to cook, I like to use Olive Oil
Heat a decent-sized pan to accommodate the ingredients.
Let the oil get hot. Add the pound or more of meat and brown. The leaner the better. Drain the oil. You can stir in a capful of soy sauce while the meat cooks.
Add the mushrooms. You can cook the mushrooms with the ground beef.
After the meat is done, spread it apart to form a medium-sized circle in the center of the pan.
Add eggs. Once the eggs start to cook - scrambling is not necessary, stir and fold until the eggs are almost firm. Runny eggs are fine because you're going to mix in the green onions. Add a pinch or two of pepper and salt.
Cook and fold everything until the eggs are completely cooked.
Serve and enjoy.
